The champenoise or traditional method is the method in which the second fermentation of the wine occurs in a bottle and which is the same as the production style of the Champagne region. Currently only sparkling wines produced in the Champagne region can use this designation.

The CO2 gas is obtained during the fermentation itself and remains dissolved in the wine. By this method the sparkling wines have a smaller bubble than the sparkling wines made by the Charmat method.

SPARKLING WINE

Brut - Blanc de Blancs

A dry, very refreshing Brut. This is a pale straw-coloured sparkling wine with golden hues. The delicious nose opens with notes of fresh fruit, apples, quince and dried flowers, followed by complex aromas of dried fruit, honey and vanilla. A beautiful even perlage of bubbles dances continuously upwards from the centre of the glass.

The Blend

CABERNET SAUVIGNON

On the nose are upfront aromas of red fruit like strawberries and plums which intermingle with those of spices and tobacco. The mouth evokes raspberries and plums with a long finish that pair perfectly with red meat, charcuterie and lamb casserole. Never stop being yourself, respecting your instinct and going your own way. Be unique like this new addition to the flock of Oveja Negra.

THE BLEND

On the nose are intense aromas of black fruit like blackberries and blueberries intermingled with notes of fresh red fruit.
